How do I set default values for time, meds and data that I enter frequently?

If you are entering data that change infrequently (wake-up time, vitamins, meds...) you can now set default values to pre-fill the data fields for you. You will just need to modify it if they change. Check the Settings/Set Default Data menu. Time, meds, custom data and special situations can be pre-set.
